FILET MIGNON

Bacon Wrapped Grass Fed 4oz Filet Mignon.

THAWING DIRECTIONS

Thaw in the bag overnight in the refrigerator or under cold running water. 

COOKING DIRECTIONS:

Pre-heat oven to 400F. Secure cut side of bacon with a toothpick or wooden skewer (optional). Season filet with fresh cracked pepper on both sides, NO salt (the Hickory smoked thick cut bacon is your salt). Heat a skillet over medium-high heat for 3 minutes. Add a touch of oil and sear bacon sides of steaks. You are not searing the actual steak, just the bacon to brown it. A couple minutes on each side will do it. 

Flip the filet off its side so the steak(s) lay in your skillet. Cook for 5 minutes. Remove steak from pan and let stand for 5 minutes before enjoying. You can make a KICKASS pan sauce by adding 3/4oz Bourbon or Armagnac and a splash of red wine to the the pan after you remove your steak(s). No seasoning needed unless you have some finely diced fresh thyme, rosemary, marjoram, oregano or lemongrass. Finish sauce with a knob of butter. Pour this over your steaks and Bon Appetite.
